Food Spotlight - Quinoa

Quinoa. Have you heard of it? I just started researching this for the Mommy and Me fitness blog.

This little super food is now a staple in my kitchen pantry.

I served it with a family favorite Lemon-Honey Chicken. Here's the recipe:

Lemon Honey Chicken
1/2 c. oil
1/2 c. honey
2 egg yolks, slightly beaten.
4 T. lemon juice
4 T. soy sauce
1/4 t. nutmeg (I just put in a pinch)
2 t. paprika
2-3 pounds of chick cut up in bite size pieces

Season chick with salt and pepper. Place in 9x13 baking dish. combine all sauce ingredients and pour over chick. Bake about 1 hour. (about 50 minutes). Serve over cooked brown rice or QUINOA!
Super easy.
Super tender.
Super tasty!
